I haven't so much as got any that should have been made into anime. But I wish with some that they would stick to the plot. Like with Elfen Lied, they left SO much out it made me a little sad XD.
Same can be said for D.Gray-man. They really should have made a second series to continue with the plot. It would have explained a lot that they left.

some of them: Sailor Moon, Rose Of the Versailles, Revolutionary Girl Utena, Azumanga Daioh and a hella loud of lot more.

Elfen Lied, they missed out TONNES, to the point of they really should just redo it like they did for FMA.
Mariko dies differently, Lucy goes out in a different way, Kurama dies differently, Guy whos eyes she ripped out early on in the series dies differently.
Pretty much most things are different.
Berserk is another culprit for this happening.
It's hard to find manga that isn't anime nowadays since everything gets subjected to it. Even short things like Haibane Renmei (Which is also a good series).
Well, I doubt that adapting it would add much, but since Bitter Virgin is indeed a very good manga that has not yet been turned into an anime, I suppose it qualifies for the list.
I think I've mentioned these on an underrated manga thread, but I'd love to see anime adaptations of Doubt and Di(e)ce, though the second one hasn't progressed very far as of yet. I second Bitter Virgin, loved that manga. I'm really into the manga of Togainu No Chi as well. That'd make a great anime, I reckon.
All this being said, I'm that annoying person who watches animes of her favourite mangas and then goes on to tear it to pieces because it didn't live up to the manga xD So perhaps it's for the best these aren't actually animes.

Dengeki Daisy and Heart no Kuni no Alcie are only onces i can think of, awesome mangas.
Although HnKnA is supposedly made an OVA, it still hasn't been released and nobody knows if it'll ever come out as it may have been cancelled... :(
HnKnA would be a great anime. Haven't heard anything about an OVA though. Sucks if it has been cancelled. Would have liked to see that.
X-Kai hasn't been made into an anime! And it's such a shame, because it's amazing! It has a great storyline and really powerful characters!
Godchild, Beauty Pop, and Nightmare Inspector are the only ones that I can think of off of the top of my head.
FAKE was made into one OVA, but they never continued it for some reason... I've got all the books and I definitely think it should be made into a real series.
Also Category:Freaks by Gokurakuin Sakurako. I've got the first three books. (This is by the same author who did Sensitive Pornograph, yaoi fans XD She just published it under a different name, and its not yaoi, but its very adult even so) I really need someone to rant about this with~
Medaka Box, Bakuman, Ultimo, Kurohime, Psyren, O-Parts Hunter...All good mangas, but have yet to be made into anime.

I would have to say Heart no Kuni Alice, Barajou no kiss, Black bird, red river, magicalxmirical, and i would say more seasons for Vampire knight.

I would want Hana-Kimi (they did do a live action version, so I guess that kinda counts), +Anima, and PhD: Phantasy Degree. I'd also like to see Diabolo get made into an anime because despite being a great series, the manga seemed like it was rushed towards and didn't get the chance to branch out and develop the characters as much as it could've. It should've been at least seven volumes, but we got three... Better than nothing, I suppose.
